Utilizing an alloy of various metals, the Clef du Vin accelerates reduction of oxygen and alters a wine’s acids and tannins, thereby affecting a young wine’s flavor and aromatics. But just like you can’t rush a proper restoration of a vintage Jaguar E-Type, the Clef du Vin cannot bring bottle ageing to your hopeful fingertips in the blink of eye. It’s a tool that creates hope by showing what “could be”. One second of exposure of the alloy dot to the wine (red or white) equals one year of ageing, and so forth. Granted it could make an already unimpressive wine even worse, but it can also expose hibernating qualities of a good wine to life and reveal what a future in cool cosseted darkness could bring to your thirsty lips.
