		<description>EY, I picked up 4 Global knives (8&quot; chef, 5&quot; utility. carver and a vegetable) about 15 years ago and can&#039;t say enough about them.They are razor sharp and can hold the edge incredibly, evidenced by the fact that I&#039;ve never had them sharpened during that time, other than to hone them periodically with a ceramic steel (ceramic steel?) I have the usual array of other makers knives, Wusthof et al, but IMHO they don&#039;t match up to the Global. </description>
