A Leading Japanese Knife Retailer Is Now Forging Its Own Blades
Having earned a reputation as a leading importer of both mass-market and boutique Japanese cutlery, Chubo Knives has just released chef’s blades of its own. Made from Inox, or stainless steel, the knives are forged and finished by hand in the renowned bladesmithing city of Seki, Japan, and are available in all-purpose 8.2-inch Gyutou ($125) and 5.9-inch Petty ($75) silhouettes. The knives boast a Rockwell hardness of 59 — a step above the Zwilling J. A. Henckels Pro series and chef-favorite Victorinox Fibrox series — allowing them to hold a sharper edge, measuring just 0.5mm wide at the tip and 1.7mm at the spine.
The knives can be purchased individually, or as a set of two for $180 (that’s a $20 savings).
